Lemon Cupcakes

The BEST Lemon Cupcakes start with a simple ONE-BOWL batter and end with fluffy Lemon Cream Cheese Frosting!

Let's make 'em!

Ingredients

FOR THE cupcakeS:

*all-purpose flour *cornstarch *sugar *baking powder *salt *unsalted butter *sour cream *milk *lemon juice *eggs *vanilla extract *lemon zest

Ingredients

FOR THE syrup:

*water *sugar *lemons *lemon juice

FOR THE frosting:

*salted butter *cream cheese *powdered sugar *lemon juice *lemon zest *vanilla extract

Sift together dry ingredients through a fine mesh sieve into a mixing bowl.

Sift.

Add remaining ingredients to bowl and mix until combined.

Mix.

Divide batter between cupcake liners and bake.

Bake.

While cupcakes are baking, boil water and sugar then add sliced lemons.

Make candied lemons.

Once candied, remove lemons from syrup.

Remove.

Stir lemon juice into simple syrup.

Add.

Use a toothpick to poke holes over the top of each cupcake.

Poke holes.

Brush each cupcake with lemon syrup.

Brush.

Beat together butter, cream cheese, lemon juice, zest, and vanilla.

Make frosting.

Frost the cupcakes with Lemon Cream Cheese Frosting.

Frost.

Garnish each cupcake with a candied lemon.

Garnish.
