Olive Garden Copycat

Crockpot Chicken Gnocchi Soup is a creamy, lightened-up, Olive Garden copycat of the famous classic, made easy thanks to the slow cooker!

Ingredients

• Chicken Breasts • Shredded Carrots • Garlic • Herbs + Spices • Chicken Stock • Half and Half • Cornstarch • Gnocchi • Baby Spinach

Place chicken breasts in crockpot. Add carrots and garlic. Sprinkle with seasonings and pour in chicken stock. Cover and cook on low.

Remove the cooked chicken to a plate. In a small bowl, whisk cornstarch into half-and-half. Stir the slurry into the soup, along with the gnocchi. Cover.

Chop or pull the chicken into pieces. Stir back into the slow cooker. Cover and cook until the gnocchi is cooked through.

Just before serving, stir in the chopped spinach and cover for a few more minutes until wilted. Adjust the seasonings and serve hot.
