Carnitas

Crock Pot Carnitas come together in the slow cooker where pork is braised in an aromatic broth, then cubed and finished off under the broiler. These succulent, caramelized carnitas are delicious in tacos or as a filling for burritos, enchiladas, quesadillas, and more!

Ingredients

• Boneless Pork Butt • Chicken Broth or Stock • Onion + Garlic • Lime Juice • Dried Cumin + Oregano • Bay Leaves • Orange • Salt & Ground Black Pepper For  Serving: • Corn or Flour Tortillas • Lime Wedges • Sour Cream • Fresh Minced Cilantro • Shredded Cheese • Avocado Chunks • Diced Tomatoes • Thinly Sliced Radishes • Salsa • Minced Onion

Place the pork in the crock pot. Cover with chicken stock. Add onion, garlic, lime juice, cumin, oregano, bay leaves, orange, and black pepper. Cover and cook until tender.

Remove the pork to a cutting board. Discard onion quarters, orange halves, and bay leaves, and strain the cooking liquid into a pot. Simmer until reduced.

Trim and discard the fat from the pork, then cut into chunks. Season the reduced cooking liquid with salt and pepper, then stir in the liquid into the pork chunks. Taste and adjust seasonings. Spread the pork onto a prepared baking sheet and broil on both sides.

Serve crock pot carnitas in tacos or stuffed into quesadillas, burritos, enchiladas, and more!
