Avocado egg Salad

Avocado Egg Salad is a great use for hard-boiled eggs, lightened up with yogurt & studded with creamy chunks of avocado, yummy on a sandwich or over salad!

Ingredients

• Plain Yogurt • Mayonnaise • Apple Cider Vinegar • Fresh Minced Herbs, such as parsley, dill, chives, etc. • Salt • Ground Black Pepper • Hard-Boiled Eggs • Avocado

MAKE THE DRESSING: in a large bowl, whisk together the yogurt, mayonnaise, vinegar, herbs (if using), salt, and pepper.

Stir diced eggs into dressing and adjust the seasonings, if needed. Cover and refrigerate if not serving immediately.

Just before serving, gently fold in the diced avocado. Enjoy Avocado Egg Salad as a sandwich, on crackers, or over a bed of lettuce.
