• olive oil • onion • garlic • jalapeño • dried pinto beans • green chiles • low-sodium chicken broth • apple cider vinegar • cumin • Mexican oregano • salt + pepper
Saute onion, garlic, and jalapeño in the instant pot in EVOO. Add beans and remaining ingredients to the pot; stir to combine. Seal the lid and cook on HIGH pressure for 50 minutes.

Drain the liquid from the beans. Use an immersion blender to puree the beans until smooth and creamy.
Adjust the seasonings to taste, adding more salt, pepper, or vinegar, if desired. Serve hot.
