• EVOO • garlic • potatoes • frozen corn • ham • chicken broth • thyme • salt + pepper • half-and-half • cornstarch (optional)
Saute minced garlic in olive oil for until fragrant.

Add diced potatoes, corn, thyme, pepper, and broth to the pot.
Stir well, bring to a boil, reduce to a simmer, and cook for 15-20 minutes or until potatoes are tender.

Remove 2 to 3 drained ladlesful of potatoes to a plate and mash until smooth.
Stir mashed potatoes back into the soup along with the diced ham and the half-and-half.

Cook soup for a few more minutes or until heated through. Serve hot and enjoy!
