In a large food processor, process cheddar, butter, Parmesan, and egg yolk, followed by flour, cayenne, and salt until a ball forms. Turn out dough onto plastic wrap, form into a disc, wrap, and chill.

Pour toasted minced pecans into one bowl and egg white in another. Roll the dough into 1-inch balls. Dip in beaten egg white and then roll in nuts. Place on prepared baking sheets.
Make an indentation on the top of each dough ball and fill with pepper jelly. Bake until lightly browned, cool, and enjoy!
