• Cornish game hens • extra-virgin olive oil • salt + pepper • honey • soy sauce • orange juice • lime juice • cornstarch
Brush Cornish hens with EVOO and season with salt and pepper. Tuck the wings, truss the legs, and place on rack in large roasting pan.

Roast for about an hour or until the juices run clear and the hens register 165°F.
Just before the hens are done, combine the honey, soy sauce, orange juice, and lime juice in a small saucepan over medium heat.

Bring to a boil and pour in cornstarch slurry while whisking. Allow to thicken for a minute and set glaze aside.
Preheat the broiler. Thickly coat each Cornish hen with citrus glaze and broil for a couple minutes until the glaze is bubbly.

Allow the hens to rest for 10 minutes and serve with the remaining glaze on the side.
