• boneless pork butt • garlic • lime juice • chipotle chile powder • ground cumin • Mexican oregano • salt + pepper • honey • cornstarch + water FOR SERVING: • flour tortillas • red cabbage, matchstick carrots, avocado, cotija cheese, fresh cilantro, lime wedges
Combine the garlic, lime juice, chipotle chile powder, cumin, Mexican oregano, salt, and pepper. Pour the mixture over the pork roast in the slow cooker.

Cover and cook on LOW for 8 to 10 hours (or HIGH for 4 to 6 hours) until the pork is extremely tender.
Transfer the pork to a cutting board, discard the fat, and use two forks to pull the pork. Skim the fat from the surface of the liquids in the crock pot.

Stir the honey into the slow cooker, and then whisk in cornstarch slurry. Add pulled pork, stir to combine, and allow to heat through.
To serve, pile crock pot pulled pork onto warm flour tortillas and garnish with desired toppings.
