Slow Cooker Barbacoa

This easy, succulent, Slow Cooker Barbacoa is bursting with FLAVOR!!!

Ingredients

*beef roast *black pepper *garlic *cilantro *chipotles in adobo *lime juice *tomato paste *cumin *chili powder *garlic salt *dried oregano *bay leaf *beef broth *Mexican beer

Puree garlic, cilantro, chipotles, lime juice, and spices in a blender or food processor.

Make paste.

Season beef and place in crockpot.

Season.

Slather beef with chipotle mixture.

Coat.

Pour in beef broth and Mexican beer. Cover and cook.

Cook.

Remove the beef and shred, discarding any fat.

Shred.

Stir shredded beef back into the cooking juices and serve.

Serve.
