Ingredients

• EVOO • onion, garlic, carrot, & celery • chicken OR vegetable broth • fire-roasted tomatoes • tomato paste • dried herbs & spices • Great Northern beans • red kidney beans • small elbow pasta • green beans • baby spinach • balsamic vinegar • Parmesan cheese • fresh parsley, for garnish

Sautée onion, garlic, carrots, and celery in EVOO until tender. Add broth, tomatoes, dried herbs, and spices. Simmer for 20 minutes.

Stir in the canned beans, pasta, green beans, and spinach. Simmer until pasta is tender.

Adjust seasonings, stir in balsamic vinegar, and serve with Parmesan and fresh parsley.
