Ingredients

*ripe tomatoes *extra-virgin olive oil *garlic *fresh herbs *sugar *salt *black pepper *balsamic vinegar *red pepper flakes *fresh chopped herbs

Break down tomatoes by cutting into chunks and then squeezing or pulsing in food processor.

Puree tomatoes.

Combine.

In a large pot, sauté minced garlic in olive oil. Add tomatoes and juices and place fresh herbs on top.

Simmer.

Bring to a simmer. Reduce heat to low, cover pot, and simmer for 30 minutes, stirring occasionally.

Add seasonings.

When sauce has thickened, remove herb stems. Stir in sugar, salt, pepper, and balsamic vinegar. Taste and adjust seasonings.

Puree.

Use an immersion blender or food mill to slightly puree sauce.
