Place the pomegranate arils on a paper towel-lined plate to remove some of the moisture and set aside.

Make batter by whisking dry ingredients in a bowl, combining butter, sugar, egg, buttermilk, and vanilla in another bowl, then gradually blending in the flour mixture.
Scrape the batter into a prepared pie plate and smooth the top. Sprinkle the pomegranate arils on top, then sprinkle with sparkling sugar.
