Quinoa Pudding is a creamy, decadent, healthy breakfast or dessert that tastes like a cross between rice pudding and tapioca...but stars nutritious superfood quinoa!

Ingredients

• quinoa • milk • maple syrup • pure vanilla extract • cinnamon • salt

Rinse and drain the quinoa, then dump it into a deep pot.

Add the milk, maple syrup, vanilla, cinnamon, and salt. Bring the mixture to a boil.

Reduce to a simmer and cover the pot, leaving the lid cracked. Simmer for 25 minutes, stirring occasionally.

Remove the pot from heat. Pour the pudding into bowls and allow to cool before serving.
