Sheet Pan Chicken & Veggies is a flavorful, quick and easy, complete dinner recipe that bakes up on just one pan, featuring pesto-coated chicken breasts and roasted potatoes and asparagus!

Ingredients

For the Chicken: • Boneless Chicken Breasts • Pesto • White Wine Vinegar • Salt + Black Pepper For the Vegetables: • Baby Red Potatoes • Asparagus • Olive Oil • Garlic Salt + Pepper

Add chicken breasts to a plastic bag with pesto, white wine vinegar, salt, and pepper. Marinate in refrigerator.

Toss cubed potatoes with extra-virgin olive oil, garlic salt, and pepper. Spread onto a sheet pan and bake for 20 minutes.

Toss trimmed aparagus with extra-virgin olive oil, garlic salt, and pepper; set aside.

Scoot potatoes to one side of the pan. Drain pesto from the marinated chicken. Add chicken to the pan next to the potatoes and bake for 15 minutes.

Add asparagus on the other side of the chicken and bake for 10-15 more minutes until chicken is cooked through and veggies are tender.
